  • 1/4 cup unsweetened canned coconut milk or cream full fat is best for creaminess
  • 2 tablespoons powdered sugar
  • 1 pinch salt
  • 3 teaspoons lemon juice

Method
 

  1. Place the frozen strawberries, coconut milk, powdered sugar, pinch of salt, and lemon juice into a high-powered blender or a food processor.
    2 cups frozen strawberries, 1/4 cup unsweetened canned coconut milk or cream, 2 tablespoons powdered sugar, 1 pinch salt, 3 teaspoons lemon juice
  2. Blend the mixture on high until it reaches a completely smooth and creamy consistency. You may need to stop and scrape down the sides or use a tamper to ensure all the frozen fruit is incorporated.
  3. Once smooth, you can spoon the mixture directly into serving bowls.
  4. For a more authentic theme park look, transfer the mixture into a piping bag fitted with a large star tip and pipe the whip into glasses in a swirl motion.
  5. Serve immediately while the consistency is firm and cold.

Notes

For the best creamy texture that mimics soft serve, always use full-fat canned coconut milk and high-quality frozen fruit. If the mixture is too soft to pipe immediately, place the blender jar in the freezer for 20 minutes to firm up.
