Easy Slow Cooker Chicken Fajitas

  • 2 lbs boneless, skinless chicken breasts
  • 1 large onion, sliced
  • 2 bell peppers (any color), sliced
  • 1 packet fajita seasoning mix
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 1/4 cup chicken broth (or water)
  • Juice of 1 lime
  • Your favorite toppings: tortillas, sour cream, salsa, guacamole, shredded cheese

Method
 

  1. Slice the onions and bell peppers.

  2. Place the sliced onions and bell peppers in the bottom of your slow cooker.

  3. Place the chicken breasts on top of the vegetables. Mix fajita seasoning, chili powder, cumin, garlic powder and onion powder in a bowl. Sprinkle dry rub mixture over chicken in slow cooker.
    2 lbs boneless, skinless chicken breasts, 1 packet fajita seasoning mix, 1 teaspoon chili powder, 1/2 teaspoon cumin, 1/4 teaspoon garlic powder, 1/2 teaspoon onion powder
  4. Pour diced tomatoes and chicken broth over the chicken. Squeeze lime juice over the ingredients.
    1 (14.5 oz) can diced tomatoes, undrained, 1/4 cup chicken broth (or water), Juice of 1 lime
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours, or until chicken is cooked through.
  6. Once cooked, shred the chicken with two forks directly in the slow cooker. Stir to combine with the vegetables and juices.

  7. Serve in warm tortillas with your favorite toppings and enjoy.
