Ingredients
  

  • 1 pound sausage breakfast, Italian, or spicy
  • 6 large eggs
  • 1 cup milk whole or 2% recommended
  • 1 cup shredded cheddar cheese
  • 2 cups bread cubes optional
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp garlic powder
  • 0.25 tsp smoked paprika
  • 0.5 cup diced bell peppers optional
  • 0.5 cup chopped spinach optional
  • 0.25 cup diced onions optional

Method
 

  1. Preheat your oven to 375°F (190°C). Lightly grease a 7x11-inch or 8x11-inch baking dish with butter or nonstick cooking spray to prevent sticking.
  2. Place your sausage in a skillet over medium heat. Cook until browned, breaking it into small crumbles with a spatula. Once fully cooked, drain any excess grease and set the meat aside.

  3. In a large mixing bowl, whisk together the 6 large eggs, milk, salt, black pepper, garlic powder, and smoked paprika until the mixture is smooth and well-combined.

  4. Evenly layer the cooked sausage, optional vegetables (peppers, spinach, onions), and shredded cheese in the prepared baking dish. If you are using bread cubes, layer them in as well. Pour the egg mixture evenly over the top of the ingredients.

  5. Place the dish in the oven and bake for 30 to 40 minutes. You will know it is done when the center is set and the top has turned a beautiful golden brown.
  6. Remove the casserole from the oven and let it rest for at least 5 minutes before serving.

Notes

Drain the sausage grease thoroughly after browning to prevent the casserole from becoming oily. If using bread, choose day-old or slightly toasted bread to absorb the egg mixture better without becoming mushy.
