Ingredients
  

  • 1 pound dried black eyed peas rinsed
  • 6 cups chicken or vegetable broth
  • 1 onion chopped
  • 2 stalks celery chopped
  • 1 red bell pepper chopped
  • 2 cloves garlic minced
  • 1 cup diced ham or smoked sausage optional
  • 1 tsp dried thyme
  • 1/2 tsp smoked paprika
  • 1/4 tsp cayenne pepper optional, for heat
  • 1 tsp salt or to taste
  • 1/2 tsp black pepper or to taste
  • Fresh parsley chopped, for garnish

Method
 

  1. Rinse the dried black eyed peas thoroughly under cold water.
    1 pound dried black eyed peas
  2. Combine the rinsed black eyed peas, chicken or vegetable broth, chopped onion, celery, red bell pepper, minced garlic, diced ham or smoked sausage (if using), dried thyme, smoked paprika, and cayenne pepper (if using) in a 6-quart slow cooker.
    1 pound dried black eyed peas, 6 cups chicken or vegetable broth, 1 onion, 2 stalks celery, 1 red bell pepper, 2 cloves garlic, 1 cup diced ham or smoked sausage, 1 tsp dried thyme, 1/2 tsp smoked paprika, 1/4 tsp cayenne pepper
  3. Stir everything together well. Cover and cook on low for 6-8 hours, or on high for 3-4 hours, until the black eyed peas are tender.
  4. During the last 30 minutes of cooking, stir in the salt and black pepper. Taste and adjust seasonings as needed.

  5. Serve warm, garnished with fresh chopped parsley if desired.

Notes

For a vegetarian option, simply omit the ham or smoked sausage and use vegetable broth. If you prefer a thicker consistency, you can mash a portion of the cooked peas against the side of the pot before serving.
