  • Olive oil Use a high-quality extra virgin olive oil for both the whipped cheese and the tomato topping.
  • Lemon zest Fresh zest adds a bright, citrusy note that cuts through the richness of the cheese.
  • Cherry tomatoes You can also use plum tomatoes, finely chopped.
  • 1 clove Garlic fresh minced; provides that classic bruschetta punch.

Notes

Expert TipsTo ensure the best results, always use the freshest ingredients possible. Since this is a raw dish, the quality of your olive oil and the ripeness of your tomatoes will make a significant difference. If preparing for a party, whip the cheese and prep the tomatoes a few hours in advance, but keep them separate to prevent the base from becoming watery.Variations & SubstitutionsFor a Mediterranean twist, add a spoonful of olive tapenade or chopped kalamata olives to the topping. Substitute feta for goat cheese or Boursin for a milder flavor. For vegan options, use plant-based cream cheese and feta. If you lack balsamic glaze, mix one tablespoon of balsamic vinegar with a quarter teaspoon of sugar and a little olive oil.Serving SuggestionsServe with warm, toasted slices of baguette, sourdough bread, pita chips, sea salt crackers, or vegetable crudités. Leftovers make an excellent pasta sauce.StorageStore leftovers in an airtight container in the refrigerator for up to 3 days. Not suitable for freezing.
