Ingredients
  

Bread Batter
  • 2 cups chopped apples (Pink Lady, Gala, or Honeycrisp), peeled and chopped
  • 1 1/2 cups all-purpose flour spooned and leveled
  • 1/2 cup granulated white sugar
  • 1/2 cup butter melted and cooled slightly
  • 2 large eggs room temperature
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
Cinnamon Swirl
  • 1/2 cup brown sugar for the swirl
  • 1 1/2 teaspoons ground cinnamon for the swirl

Method
 

  1. Preheat your oven to 350°F. Grease and flour an 8 x 5-inch loaf pan or line it with parchment paper for easy removal.
  2. In a small bowl, whisk together the brown sugar and ground cinnamon. Set this mixture aside.

  3. In a large mixing bowl, whisk the eggs and granulated sugar together until well combined. Whisk in the melted butter and vanilla extract.

  4. Stir in the all-purpose flour, baking powder, baking soda, and salt. Stir just until combined; the batter will be very thick. Gently fold in the chopped apples.

  5. Transfer half of the apple bread batter into the prepared loaf pan. Sprinkle about 3/4 of the cinnamon-sugar swirl mixture over the batter.
  6. Top with the remaining batter. Sprinkle the rest of the cinnamon-sugar mixture on top. Use a butter knife or spatula to gently swirl the mixture through the top layer of batter.
  7. Bake for 35 to 45 minutes. The bread is done when the top is lightly golden and a toothpick inserted into the center comes out clean. If the bread browns too quickly, tent it with foil for the last 10 to 15 minutes.
  8. Allow the bread to cool completely in the pan before slicing and serving.

Notes

Always spoon and level your flour rather than scooping it directly with a measuring cup to avoid a dense loaf. Use parchment paper with an extra inch hanging over the sides to create a sling for easy lifting.
