Easiest Crockpot White Chicken Chili

Quick to throw together, packed with healthy ingredients, and bursting with flavor. This recipe is a staple in our house for busy weeknights.

Ingredients
  

  • 1.5 lbs boneless, skinless chicken breasts
  • 1 medium yellow onion chopped
  • 2 cloves garlic minced
  • 1 (15 ounce) can great northern beans rinsed and drained
  • 1 (15 ounce) can cannellini beans rinsed and drained
  • 1 (4 ounce) can diced green chilies
  • 4 cups chicken broth
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 ounces cream cheese softened
  • shredded cheddar cheese, sour cream, cilantro, avocado slices Optional toppings

Method
 

  1. Place chicken breasts, onion, and garlic in the crockpot.
    1.5 lbs boneless, skinless chicken breasts, 1 medium yellow onion, 2 cloves garlic
  2. Add both types of beans, green chilies, chicken broth, cumin, oregano, salt, and pepper.
    1 (15 ounce) can great northern beans, 1 (15 ounce) can cannellini beans, 1 (4 ounce) can diced green chilies, 4 cups chicken broth, 1 teaspoon ground cumin, 1 teaspoon dried oregano, 1/2 teaspoon salt, 1/4 teaspoon black pepper
  3. Stir to combine.
  4. Cover and cook on low for 6-8 hours, or on high for 3-4 hours.
  5. Remove chicken and shred with two forks.

  6. Return shredded chicken to the crockpot.

  7. Stir in softened cream cheese until melted and well combined.

  8. Serve hot, topped with your favorite toppings.
