Ingredients
  

For the Chicken
  • 2 lbs boneless, skinless chicken thighs cut into 1-inch pieces
For the Teriyaki Sauce
  • ¾ cup soy sauce
  • ½ cup brown sugar packed
  • ¼ cup honey
  • 2 tablespoons rice vinegar
  • 2 tablespoons sesame oil
  • 1 tablespoon cornstarch
  • 1 teaspoon ground ginger
  • ½ teaspoon garlic powder
  • ¼ teaspoon red pepper flakes optional, for heat
For Garnish
  • Sesame seeds
  • Chopped green onions

Method
 

  1. Combine Sauce: In a bowl, whisk together soy sauce, brown sugar, honey, rice vinegar, sesame oil, cornstarch, ginger, garlic powder, and red pepper flakes (if using).
    ¾ cup soy sauce, ½ cup brown sugar, ¼ cup honey, 2 tablespoons rice vinegar, 2 tablespoons sesame oil, 1 tablespoon cornstarch, 1 teaspoon ground ginger, ½ teaspoon garlic powder, ¼ teaspoon red pepper flakes
  2. Dump and Go: Place the chicken pieces into the crockpot. Pour the teriyaki sauce mixture over the chicken, ensuring all pieces are coated.

  3. Cook: Cover and cook on low for 6-8 hours or on high for 3-4 hours, or until the chicken is cooked through and easily shreds with a fork.
  4. Shred (Optional): If desired, shred the chicken with two forks directly in the crockpot. This will allow the chicken to absorb more of the sauce.
  5. Serve: Serve the Dump Go Crockpot Teriyaki Chicken over rice or quinoa. Garnish with sesame seeds and chopped green onions. Enjoy!
