Ingredients
  

  • 8 oz bowtie pasta uncooked
  • 1 cup dill pickles chopped
  • 1/2 cup red onion diced
  • 1 cup sharp cheddar cheese diced
  • 1/2 cup bacon cooked and crumbled
  • 1/4 cup dill pickle juice from the jar
  • 1/4 cup mayonnaise
  • 1/4 cup Greek yogurt
  • 1 tsp Dijon mustard
  • 1/2 tsp garlic powder
  • 1/8 tsp cayenne pepper
  • 1/8 tsp black pepper freshly cracked
  • 1 Tbsp fresh dill chopped
  • 1/4 tsp salt

Method
 

  1. Begin by cooking the 8 oz. of bowtie pasta according to the package directions. Once finished, drain the pasta and rinse it under cold water until it is completely cool to the touch.

  2. In a small mixing bowl, prepare the dressing by whisking together the dill pickle juice, mayonnaise, Greek yogurt, Dijon mustard, garlic powder, cayenne pepper, black pepper, fresh dill, and salt until the mixture is smooth.

  3. In a large mixing bowl, combine the cooled pasta, chopped dill pickles, diced red onion, diced sharp cheddar cheese, and the cooked, crumbled bacon.

  4. Pour the prepared dressing over the pasta salad ingredients and toss everything together until well-coated.
  5. Place the salad in the refrigerator to chill for at least 1 to 2 hours before serving. This allows the flavors to meld and the pasta to soak up the tangy dressing.
  6. Garnish with a little extra fresh dill before serving if desired.

Notes

To ensure the best texture, always rinse your pasta under cold water immediately after draining. Use the juice straight from your favorite pickle jar for the dressing; it provides a more complex flavor than plain vinegar.
