Ingredients
  

Pasta
  • 1 pound pasta (spaghetti, penne, or fusilli)
Sauce
  • 1 tablespoon olive oil
  • 2 cloves garlic minced
  • 28 ounce canned crushed tomatoes (1 can)
  • 5 ounces fresh spinach roughly chopped
  • 1/2 teaspoon red pepper flakes optional
  • 1/4 cup grated Parmesan cheese plus extra for serving
Seasoning
  • salt to taste
  • black pepper to taste
Garnish (optional)
  • fresh basil leaves for garnish
  • 4 ounces feta cheese crumbled

Method
 

  1. Cook pasta according to package directions, drain, reserving about 1 cup of pasta water.

  2. While the pasta cooks, heat olive oil in a large skillet over medium heat.

  3. Add garlic and cook until fragrant, about 1 minute. Be careful not to burn it.

  4. Pour in crushed tomatoes and red pepper flakes (if using). Bring to a simmer.

  5. Stir in spinach and cook until wilted, about 2-3 minutes.

  6. Season with salt and black pepper to taste. Adjust seasoning if needed.

  7. Add cooked pasta to the skillet and toss to coat.

  8. If the sauce is too thick, add a little reserved pasta water until desired consistency is reached.
  9. Stir in Parmesan cheese and serve immediately.

Notes

Optional: Add grilled chicken or shrimp for extra protein.
