- In a small mixing bowl, combine the cream cheese, minced spring onion, chopped chives, lemon juice, lemon zest, and black pepper. - Using paper towels, thoroughly pat dry each cucumber slice to ensure the topping stays in place and the appetizer does not become watery. Lay the dried slices out on a serving tray or large plate.1 cucumber

Notes
To achieve the best results, dry the cucumber slices completely to prevent the appetizer from becoming soggy. These bites are best enjoyed fresh but can be kept in the refrigerator for up to 2 hours.
