  • 1 pound ground beef
  • 1 packet taco seasoning
  • 15 ounce black beans rinsed and drained
  • 15 ounce corn drained
  • 10 ounce diced tomatoes and green chilies (like Rotel) undrained
  • 1 cup salsa
  • 10 ounce refrigerated biscuit dough cut into quarters
  • 2 cups shredded cheddar cheese

  • sour cream
  • guacamole
  • chopped cilantro
  • diced tomatoes

Method
 

  1. Brown ground beef in a skillet over medium heat. Drain excess grease.

  2. Stir in taco seasoning, black beans, corn, diced tomatoes and green chilies, and salsa. Mix well.

  3. Transfer the mixture to your Crockpot.
  4. Arrange biscuit dough quarters over the meat mixture.

  5. Sprinkle with shredded cheddar cheese.
    2 cups shredded cheddar cheese
  6. Cover and cook on low for 3-4 hours or on high for 1-2 hours, or until biscuits are cooked through and cheese is melted.
  7. Serve hot with your favorite taco toppings.
