Ingredients
  

Chicken
  • 2 lbs boneless, skinless chicken breasts
Vegetables
  • 1 green bell pepper chopped
  • 1 red bell pepper chopped
  • 1 onion chopped
  • 2 cloves garlic minced
Sauce
  • 14.5 oz can diced tomatoes undrained
  • 10 oz can Rotel diced tomatoes and green chilies undrained
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/4 cup Cajun seasoning or to taste
  • 1 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • Salt to taste
  • Pepper to taste
Pasta
  • 1 lb penne pasta cooked according to package directions

Method
 

  1. Place chicken breasts in the bottom of your crock pot.
    2 lbs boneless, skinless chicken breasts
  2. Add the chopped bell peppers, onion, and minced garlic over the chicken.
    1 green bell pepper, 1 red bell pepper, 1 onion, 2 cloves garlic
  3. Pour in the diced tomatoes, Rotel, and chicken broth.
    14.5 oz can diced tomatoes, 10 oz can Rotel diced tomatoes and green chilies, 1 cup chicken broth
  4. Sprinkle the Cajun seasoning, oregano, paprika, salt, and pepper over the mixture.
    1/4 cup Cajun seasoning, 1 teaspoon dried oregano, 1/2 teaspoon paprika, Salt, Pepper
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours, or until the chicken is cooked through and easily shreds.
  6. Remove the chicken from the crock pot and shred it with two forks. Then, return the shredded chicken to the crock pot.
    2 lbs boneless, skinless chicken breasts
  7. Stir in the heavy cream and cooked pasta. Mix well to combine.
    1 cup heavy cream, 1 lb penne pasta
