Place chicken breasts in the bottom of your crock pot.
2 lbs boneless, skinless chicken breasts
Add the chopped bell peppers, onion, and minced garlic over the chicken.

Pour in the diced tomatoes, Rotel, and chicken broth.

Sprinkle the Cajun seasoning, oregano, paprika, salt, and pepper over the mixture.

Cover and cook on low for 6-8 hours or on high for 3-4 hours, or until the chicken is cooked through and easily shreds.
Remove the chicken from the crock pot and shred it with two forks. Then, return the shredded chicken to the crock pot.
