  • 2 lbs boneless, skinless chicken thighs cut into 1-inch pieces
Sauce
  • 1/2 cup bourbon
  • 1/2 cup soy sauce
  • 1/2 cup brown sugar packed
  • 1/4 cup water
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon cornstarch
  • 1 teaspoon ground ginger
  • 1 clove garlic minced
  • 1/4 teaspoon red pepper flakes optional
Serving
  • cooked rice for serving
  • sesame seeds for garnish
  • chopped green onions for garnish

Method
 

  1. Place chicken pieces in the crock pot.
    2 lbs boneless, skinless chicken thighs
  2. In a medium bowl, whisk together bourbon, soy sauce, brown sugar, water, apple cider vinegar, cornstarch, ginger, garlic, and red pepper flakes (if using).

  3. Pour the sauce over the chicken.
  4. Stir to ensure the chicken is evenly coated.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours, or until chicken is cooked through and tender.
  6. Shred the chicken with two forks right in the crock pot.
  7. Stir the shredded chicken into the sauce to combine.
  8. Serve over cooked rice.
