- In a large skillet, heat olive oil over medium-high heat. Toss beef cubes with salt, pepper, and flour. Sear the beef on all sides until browned.
- Place chopped onion, carrots, and celery in the bottom of the crock pot. Add seared beef on top of the vegetables.
- In a bowl, whisk together beef broth, tomato paste, thyme, rosemary, Worcestershire sauce, and pour over the beef and vegetables in the crock pot. Add bay leaves.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, or until beef is tender.
- Add potatoes during the last 2 hours of cooking or until tender.
- Stir in frozen peas during the last 30 minutes of cooking time.
- Remove bay leaves before serving. Serve hot in bowls. Enjoy!
