Ingredients
  

Beef:
  • 2 lbs Beef Stew Meat cut into 1-inch cubes
  • 2 tbsp Olive Oil
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 2 tbsp all-purpose flour
Vegetables:
  • 1 large Onion chopped
  • 3 Carrots peeled and sliced
  • 3 stalks Celery chopped
  • 4 medium Potatoes peeled and cubed
  • 1 cup Frozen Peas
Broth & Seasoning:
  • 4 cups Beef Broth
  • 1 tbsp Tomato Paste
  • 1 tsp Dried Thyme
  • 1/2 tsp Dried Rosemary
  • 2 Bay Leaves
  • 1 tbsp Worcestershire sauce

Method
 

  1. In a large skillet, heat olive oil over medium-high heat. Toss beef cubes with salt, pepper, and flour. Sear the beef on all sides until browned.
  2. Place chopped onion, carrots, and celery in the bottom of the crock pot. Add seared beef on top of the vegetables.
  3. In a bowl, whisk together beef broth, tomato paste, thyme, rosemary, Worcestershire sauce, and pour over the beef and vegetables in the crock pot. Add bay leaves.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours, or until beef is tender.
  5. Add potatoes during the last 2 hours of cooking or until tender.
  6. Stir in frozen peas during the last 30 minutes of cooking time.
  7. Remove bay leaves before serving. Serve hot in bowls. Enjoy!
