Ingredients
  

  • Feta Cheese block, crumbled
  • 1 Large Egg organic, free-range
  • Dried Oregano
  • Red Pepper Flakes optional
  • 1 Small Tortilla or sourdough toast
  • Avocado smashed
  • Lemon Juice
  • Pickled Onions
  • Cooking Oil light spray
  • Chili Oil optional

Equipment

  • Non-stick fry pan
  • Spatula

Method
 

  1. Place a small non-stick fry pan over medium heat and add a light spray of oil. Crumble the feta cheese around the outer edges of the pan, leaving space in the center.

  2. Allow the feta to sizzle and melt for about one to two minutes until it begins to look slightly golden.
  3. Carefully crack the egg into the center of the pan, surrounded by the feta ring.

  4. Sprinkle the dried oregano and red pepper flakes over the egg.

  5. Let the egg cook until the whites are set but the yolk is still runny (or cook longer if you prefer a firm yolk).
  6. While the egg cooks, warm your tortilla. Smash the avocado onto the base and season with a squeeze of lemon juice.

  7. Use a spatula to gently lift the egg and its crispy feta skirt out of the pan and place it directly onto the avocado.
  8. Top with pickled onions and a drizzle of chili oil, then serve immediately.

Notes

Use a non-stick pan to ensure the feta crisps without sticking, and keep the heat at medium to prevent burning. For a firmer yolk with a crispy bottom, cover the pan with a lid for the last minute of cooking.
