- Place a small non-stick fry pan over medium heat and add a light spray of oil. Crumble the feta cheese around the outer edges of the pan, leaving space in the center.Cooking Oil, Feta Cheese
- Allow the feta to sizzle and melt for about one to two minutes until it begins to look slightly golden.
- Carefully crack the egg into the center of the pan, surrounded by the feta ring.1 Large Egg

- Let the egg cook until the whites are set but the yolk is still runny (or cook longer if you prefer a firm yolk).

- Use a spatula to gently lift the egg and its crispy feta skirt out of the pan and place it directly onto the avocado.

Notes
Use a non-stick pan to ensure the feta crisps without sticking, and keep the heat at medium to prevent burning. For a firmer yolk with a crispy bottom, cover the pan with a lid for the last minute of cooking.
