- Place the corn, self-raising flour, salt, eggs, grated cheddar cheese, milk, chopped dill, and sliced spring onions in a medium-sized bowl and combine thoroughly.2 cups corn kernels, 1/2 cup self-raising flour, 1/2 tsp salt, 2 eggs, 1/2 cup cheddar, 1 tbsp full-cream milk, 2 tbsp fresh dill, 2 spring onions
- Heat a large heavy-based frying pan over medium heat. Drizzle with olive oil so the base of the pan is evenly coated.2-4 tbsp olive oil
- Spoon 1/4 cup of the corn mixture into the pan. Spray the top of the mixture with olive oil spray before using your spatula to gently flatten it into a circular shape.olive oil spray
- Cook 2–3 fritters at a time, being careful not to overcrowd the pan.
- Cook the fritters for 6–8 minutes in total, flipping once halfway through until they are golden and crispy. Transfer the cooked fritters to a plate lined with paper towel to drain.
- Serve the hot fritters with a dollop of sour cream.sour cream
Notes
To achieve the best texture, ensure fresh or thawed corn is thoroughly dried with a paper towel before mixing to prevent a watery batter. If the mixture is too thick, simply add a small splash of extra milk to reach the desired consistency.
