Ingredients
  

  • 2 cups corn kernels fresh, tinned or frozen (300 g)
  • 1/2 cup self-raising flour (75 g)
  • 1/2 tsp salt
  • 2 eggs
  • 1/2 cup cheddar freshly grated (60 g)
  • 1 tbsp full-cream milk (whole)
  • 2 tbsp fresh dill roughly chopped
  • 2 spring onions (scallions), finely sliced
  • 2-4 tbsp olive oil

Method
 

  1. Place the corn, self-raising flour, salt, eggs, grated cheddar cheese, milk, chopped dill, and sliced spring onions in a medium-sized bowl and combine thoroughly.

  2. Heat a large heavy-based frying pan over medium heat. Drizzle with olive oil so the base of the pan is evenly coated.

  3. Spoon 1/4 cup of the corn mixture into the pan. Spray the top of the mixture with olive oil spray before using your spatula to gently flatten it into a circular shape.

  4. Cook 2–3 fritters at a time, being careful not to overcrowd the pan.
  5. Cook the fritters for 6–8 minutes in total, flipping once halfway through until they are golden and crispy. Transfer the cooked fritters to a plate lined with paper towel to drain.
  6. Serve the hot fritters with a dollop of sour cream.

Notes

To achieve the best texture, ensure fresh or thawed corn is thoroughly dried with a paper towel before mixing to prevent a watery batter. If the mixture is too thick, simply add a small splash of extra milk to reach the desired consistency.
