- Set your oven to 425°F (220°C). Place a large baking sheet inside while it heats up so the surface is hot when the fries hit the pan.
- Peel the potatoes if desired, then cut them into uniform strips about 1/4 inch thick. Try to keep them consistent so they cook at the same rate.2 medium sweet potatoes
- Place the strips in a bowl of cold water for at least 30 minutes. This step is essential as it draws out excess starch, which is the secret to a crispy finish.
- Drain the water and pat the fries completely dry with paper towels. In a large bowl, toss them with olive oil, garlic powder, paprika, salt, and pepper. - Carefully remove the hot baking sheet from the oven. Arrange the fries in a single layer, ensuring they are not touching. Bake for 25 to 30 minutes, flipping them halfway through the cooking time to ensure even browning.
- Once they are golden brown and crisp, remove them from the oven and let them rest for a few minutes. This allows the exterior to firm up even more before serving.

For the best crunch, ensure the fries are bone-dry after soaking and do not overcrowd the baking sheet. Leftovers can be stored for up to 3 days and reheated in the oven or air fryer to maintain crispiness.
