Ingredients
  

For the Steak:
  • 1 pound sirloin steak thinly sliced into strips
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon chili powder
  • Salt and pepper to taste
For the Creamy Queso Rice:
  • 1 tablespoon butter
  • 1/2 cup chopped onion
  • 1 clove garlic minced
  • 1 cup long-grain rice uncooked
  • 2 cups chicken broth
  • 1 can diced tomatoes and green chiles (Ro-Tel) 10-ounce, undrained
  • 4 ounces cream cheese softened
  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped cilantro for garnish (optional)

Method
 

  1. Prepare the Steak:
    In a bowl, toss steak strips with olive oil, garlic powder, chili powder, salt, and pepper.

  2. Heat a large skillet over medium-high heat.
  3. Cook steak strips for 3-5 minutes, or until browned and cooked through. Set aside.

  4. Make the Creamy Queso Rice:
    In the same skillet, melt butter over medium heat.

  5. Add onion and cook until softened, about 5 minutes.

  6. Add minced garlic and cook for 1 minute more, until fragrant.

  7. Stir in rice and cook for 1 minute, stirring constantly.

  8. Pour in chicken broth and diced tomatoes and green chiles. Bring to a boil.

  9. Reduce heat to low, cover, and simmer for 18-20 minutes, or until rice is cooked and liquid is absorbed.

  10. Stir in cream cheese and cheddar cheese until melted and creamy.
    4 ounces cream cheese, 1 cup shredded cheddar cheese
  11. Assemble and Serve:
    Gently fold the cooked steak strips into the creamy queso rice.

  12. Garnish with chopped cilantro, if desired.
