Ingredients
  

Pasta:
  • 1 pound pasta (penne, rotini, or your favorite)
Sausage & Veggies:
  • 1 pound smoked sausage sliced
  • 1 medium onion chopped
  • 1 bell pepper (any color), chopped
  • 2 cloves garlic minced
Sauce:
  • 8 ounces cream cheese softened
  • 1/2 cup milk
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
Optional Garnish:
  • Fresh parsley chopped
  • Red pepper flakes

Method
 

  1. Cook pasta according to package directions until al dente. Drain and set aside.

  2. In a large skillet or pot, brown the sliced smoked sausage over medium heat. Add the chopped onion and bell pepper. Cook until softened, about 5-7 minutes.

  3. Stir in the minced garlic and cook for another minute until fragrant.

  4. Reduce heat to low. Add the softened cream cheese to the skillet. Stir until melted and smooth.

  5. Gradually add the milk, stirring constantly to prevent lumps, until the sauce reaches your desired consistency.

  6. Stir in the Parmesan cheese, Italian seasoning, salt, and pepper.

  7. Add the cooked pasta to the skillet with the sausage and cream cheese sauce. Toss to coat completely.
