Cream Cheese Filled Red Velvet Cookies

Soft, chewy red velvet cookies with a creamy, tangy cream cheese filling. Unbelievably delicious and surprisingly easy to make!

Ingredients
  

For the Red Velvet Cookies:
  • 1 1/2 cups all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter softened
  • 3/4 cup granulated sugar
  • 1/4 cup packed brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 tablespoon red food coloring
  • 1 teaspoon white vinegar
  • 1/2 cup buttermilk
For the Cream Cheese Filling:
  • 4 ounces cream cheese softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract

Method
 

  1. Prep: Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. Combine Dry Ingredients: In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt.

  3. Cream Butter and Sugars: In a large bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy.

  4. Add Wet Ingredients: Beat in the egg and vanilla extract until well combined.

  5. Mix Red Food Coloring, Vinegar and Buttermilk : In a small bowl , blend the three ingredients. Mix until combined.

  6. Alternate Adding Dry and Wet Ingredients: Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk mixture, beginning and ending with the dry ingredients. Mix until just combined, do not over mix.

  7. Prepare Cream Cheese Filling: In a small bowl, beat together softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.

  8. Scoop Cookie Dough: Drop rounded tablespoons of cookie dough onto the prepared baking sheets, spacing them apart.
  9. Make Indentations: Create a small indentations in the center of each cookie dough mound using a spoon or your thumb.
  10. Fill: Spoon or pipe a small amount of cream cheese filling into the indentations.
    4 ounces cream cheese, 1/2 cup powdered sugar, 1 teaspoon vanilla extract
  11. Bake: Bake for 10-12 minutes, or until the edges are set and the centers are slightly soft.
  12. Cool: Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
