Method
 

  1. In a medium bowl, mix together the softened goat cheese, finely chopped dried cranberries, finely chopped pecans, honey, and cinnamon until well combined.
  2. Cover the bowl and refrigerate for at least 30 minutes to firm up the mixture.
  3. Remove the mixture from the refrigerator. Using a spoon or small cookie scoop, roll the mixture into 1-inch balls.
  4. Roll each truffle in the finely chopped pecans, pressing gently to adhere.
