Ingredients
  

Creamy Base
  • 1 package cream cheese, softened 8 ounce
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
Corn Mixture
  • 1 can whole kernel corn, drained 15 ounce
  • 1 can diced tomatoes and green chilies, drained 10 ounce, such as Rotel
  • 1/2 cup chopped green onions
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped red bell pepper optional
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • salt and pepper to taste

Method
 

  1. In a large bowl, combine the softened cream cheese, mayonnaise, and sour cream. Mix until smooth and creamy.
  2. Add the drained corn, diced tomatoes and green chilies, green onions, cheddar cheese, and red bell pepper (if using) to the cream cheese mixture.
  3. Stir in the chili powder, garlic powder, salt, and pepper. Mix everything until well combined.
  4. Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld together.
  5. Before serving, give the dip one more quick stir.
  6. Serve chilled with your favorite tortilla chips, crackers, or veggies.

Notes

Ensure your cream cheese is completely softened for a smooth, lump-free dip. For a milder flavor, use mild diced tomatoes and green chilies or omit the chili powder. For a spicier kick, add cayenne pepper or use a hot variety. Using fresh corn and herbs can brighten the flavor. Taste and adjust seasonings before chilling. Letting the dip chill for at least 30 minutes is essential for the flavors to meld. Serve with tortilla chips, crackers, pita chips, or vegetable sticks.
