Ingredients
  

Dip Base
  • 1 can black beans 15 ounce, drained and rinsed
  • 1 can corn 15 ounce, drained
  • 1 red bell pepper diced
  • 1 small red onion diced
  • 1 jalapeño pepper seeded and finely chopped
  • 1/2 cup cilantro chopped
Dressing and Seasoning
  • 2 tablespoons olive oil
  • 2 tablespoons lime juice
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • 1 cup shredded cheese optional, for serving

Method
 

  1. In a large bowl, combine the black beans, corn, red bell pepper, red onion, and jalapeño pepper.

  2. In a small bowl, whisk together the olive oil, lime juice, and cumin.

  3. Pour the dressing over the bean mixture and stir until everything is well coated. Do not overmix.
  4. Stir in the chopped cilantro and season with salt and pepper to taste.

  5. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.
  6. Just before serving, sprinkle the shredded cheese on top (if using).

  7. Serve the cowboy caviar dip with tortilla chips, on tacos, or as a topping for grilled meats or vegetables.

Notes

Use fresh and high-quality ingredients for the best taste. Letting the dip chill for at least 30 minutes is crucial for the flavors to meld. For an extra kick, add some diced hot peppers or a sprinkle of cayenne pepper. Consider making a double batch, as it's always a crowd favorite.
