Ingredients
  

  • 1 cup cottage cheese full-fat or low-fat
  • 1 large egg
  • 1/2 cup shredded cheddar cheese or parmesan or mozzarella
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp smoked paprika
  • Salt and black pepper to taste
  • everything bagel seasoning or chili flakes Optional

Method
 

  1. Set your oven to 375°F (190°C) and line a large baking sheet with parchment paper or a silicone baking mat to prevent sticking.
  2. In a blender or food processor, combine the cottage cheese, egg, shredded cheese, garlic powder, onion powder, paprika, salt, and pepper; blend until mostly smooth.

  3. Use a tablespoon to drop small mounds of the mixture onto the prepared baking sheet, spacing them out to allow for spreading.
  4. Use the back of the spoon to gently flatten each mound into a thin circle to ensure crispiness.
  5. Bake for 20 to 30 minutes, watching closely toward the end until they are deep golden brown around the edges.
  6. Remove from the oven and let the chips sit on the tray for at least 10 minutes to finish crisping up.
  7. Once firm and crunchy, peel them off the parchment and enjoy immediately.

Notes

Always use parchment paper to prevent sticking, as foil or unlined pans will cause the cheese to tear. Store cooled chips in an airtight container at room temperature for 2 to 3 days to maintain crispness.
