- Add frozen black eyed peas, vegetable broth (or water), salt, and black pepper to a medium pot. If using, add olive oil now.12 oz frozen black eyed peas, 4 cups vegetable broth, 1/2 tsp salt, 1/4 tsp black pepper, 1 tbsp olive oil
- Bring the liquid to a boil over medium-high heat.
- Once boiling, reduce the heat to low, cover the pot, and simmer for 15-20 minutes, or until the peas are tender. Stir occasionally to prevent sticking.
- Drain any excess liquid, if desired, or leave some for a richer sauce. Taste and adjust seasoning as needed.
- Serve warm as a side dish or incorporate into your favorite recipes.
Notes
For extra flavor, you can sauté a chopped onion or bell pepper before adding the peas and broth. A pinch of smoked paprika or a bay leaf also adds depth.
