  • 12 oz frozen black eyed peas no need to thaw
  • 4 cups vegetable broth or water
  • 1/2 tsp salt or to taste
  • 1/4 tsp black pepper or to taste
  • 1 tbsp olive oil optional, for added richness

Method
 

  1. Add frozen black eyed peas, vegetable broth (or water), salt, and black pepper to a medium pot. If using, add olive oil now.

  2. Bring the liquid to a boil over medium-high heat.
  3. Once boiling, reduce the heat to low, cover the pot, and simmer for 15-20 minutes, or until the peas are tender. Stir occasionally to prevent sticking.
  4. Drain any excess liquid, if desired, or leave some for a richer sauce. Taste and adjust seasoning as needed.

Notes

For extra flavor, you can sauté a chopped onion or bell pepper before adding the peas and broth. A pinch of smoked paprika or a bay leaf also adds depth.
