Ingredients
  

  • 1 1/2 cups chopped strawberries
  • 1 cup plain greek yogurt
  • 1 tbsp honey
  • 1 tsp vanilla extract
  • 1 cup semi sweet chocolate chips
  • 2 tbsp coconut oil

Method
 

  1. In a large mixing bowl, add the chopped strawberries, plain greek yogurt, honey, and vanilla extract. Stir until the fruit is thoroughly coated and combined.

  2. Line a baking sheet or large plate with parchment paper. Use a spoon or small scoop to place about 2 tablespoons of the mixture onto the sheet for each cluster (approx 10 clusters).
  3. Place the baking sheet in the freezer for 1 to 2 hours, or until the clusters are completely frozen solid.
  4. Combine the semi-sweet chocolate chips and coconut oil in a microwave-safe bowl. Microwave in 15 to 30-second intervals, stirring between each, until the chocolate is smooth and melted.

  5. Remove the frozen clusters from the freezer. Using a spoon or fork, carefully dip each cluster into the melted chocolate until fully coated and place back onto the parchment paper.
  6. Return the clusters to the freezer for a few minutes to allow the chocolate shell to harden. Serve immediately or store for later.

Notes

These clusters are best served slightly thawed for a minute or two so the yogurt center is creamy rather than icy. Store them in the freezer in an airtight container for up to two weeks.
