  • Fresh strawberries diced
  • Strawberry Greek yogurt
  • Chocolate chips dark, milk, or semi-sweet
  • Coconut oil optional
  • Sea salt optional

Method
 

  1. Line a large baking sheet with parchment paper to prevent sticking and set it aside.
  2. In a medium mixing bowl, combine the diced fresh strawberries and the strawberry Greek yogurt. Stir until the fruit is thoroughly coated in the creamy yogurt.

  3. Using an ice cream scoop or a large spoon, drop the mixture onto the prepared baking sheet. Aim for clusters about 2 inches in size, ensuring there is space between each one.
  4. Place the baking sheet in the freezer for at least 30 minutes, or until the yogurt clusters are frozen solid.
  5. Place the chocolate chips (and coconut oil, if using) in a microwave-safe bowl. Heat in 30-second intervals, stirring in between, until the chocolate is completely smooth. Let it cool for 3 to 5 minutes.

  6. Remove the frozen clusters from the freezer. Use a fork to dip each cluster into the melted chocolate, ensuring it is fully coated. Return the bites to the parchment paper.
  7. If desired, sprinkle with sea salt immediately. Let the bites sit for a few minutes until the chocolate shell hardens, then enjoy!

Notes
