Method
 

  1. Gently pat the drained cherries dry with a paper towel. This ensures the chocolate adheres properly.

  2. In a heatproof bowl set over a simmering pot of water (double boiler), melt the chocolate with coconut oil (if using) constantly, until smooth. Be careful not to burn the chocolate! Remove from heat.

  3. Holding each cherry by its stem, dip it into the melted chocolate.
