Ingredients
  

  • 2 tablespoons cacao powder (or cocoa powder)
  • 2 tablespoons maple syrup (or honey)
  • 1 teaspoon vanilla extract
  • 1 cup milk (dairy or dairy-free like cashew, almond, or oat milk)
  • 1/4 cup chia seeds
  • Fresh raspberries for garnish
  • Chocolate shavings for garnish
  • Coconut whipped cream for topping
  • Nuts or seeds for extra crunch

Method
 

  1. In a medium-sized mixing bowl, combine the cacao powder, maple syrup, vanilla extract, milk, and chia seeds.

  2. Whisk the ingredients together vigorously until everything is well combined and there are no large clumps of cacao powder.
  3. Let the mixture sit at room temperature for about 15 minutes. This allows the chia seeds to begin the gelling process.
  4. After 15 minutes, give the mixture one final whisk to break up any clumps of seeds that may have settled at the bottom.
  5. Cover the bowl and place it in the refrigerator. Let it chill for a minimum of 4 hours, though leaving it overnight produces the best texture.
  6. When ready to serve, remove from the fridge and stir with a spoon. Divide the pudding into small dessert glasses and add your favorite toppings like fruit or chocolate shavings.

Notes

If you prefer a completely smooth texture rather than the traditional tapioca-like consistency, you can place the mixture into a high-powered blender and blitz it until it becomes a smooth chocolate mousse. Additionally, if the pudding isn't thickening after the initial 15-minute rest, your chia seeds might be too old and should be replaced.
