  • 2 bell peppers any color, sliced
  • 1 medium onion sliced
  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • 1 tablespoon tomato paste
  • 1 14.5 ounce can diced tomatoes undrained
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • to taste salt
  • to taste black pepper
  • 2 tablespoons fresh parsley chopped (for garnish)

Method
 

  1. Slice the chicken sausage into ½-inch thick rounds.

  2. Heat olive oil in a large skillet over medium heat. Add sliced bell peppers and onion. Cook until softened, about 5-7 minutes.
