For the Chicken:
  • 2 boneless, skinless chicken breasts
  • 1/2 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 large egg beaten
  • 1 cup Italian breadcrumbs
  • 1/2 cup grated Parmesan cheese
For the Sauce & Assembly:
  • 24 ounce marinara sauce
  • 8 ounces mozzarella cheese shredded
  • 2 tablespoons olive oil
  • Fresh basil leaves for garnish (optional)

Method
 

  1. Preheat your oven to 375°F (190°C). Lightly grease a baking dish.
  2. Prepare three shallow dishes: one with flour, salt, and pepper; one with the beaten egg; and one with breadcrumbs and Parmesan cheese.
  3. Dip each chicken breast in flour, then egg, then breadcrumbs, ensuring it's fully coated.
  4. Heat the olive oil in a large skillet over medium heat.
  5. Sear the chicken breasts for 3-4 minutes per side, until golden brown.
  6. Pour a thin layer of marinara sauce into the prepared baking dish.
  7. Place the seared chicken breasts on top of the sauce.
  8. Cover each chicken breast with marinara sauce and sprinkle generously with mozzarella cheese.
  9. Bake for 20-25 minutes, or until the cheese is melted and bubbly, and the chicken is cooked through.
  10. Garnish with fresh basil leaves, if desired, and serve immediately.
