  • 2 chicken breasts cooked and sliced
  • 6 burrito size tortillas large
  • 3 cups lettuce chopped
  • 1 large tomato diced
  • 1 avocado diced
  • 1 cup sour cream
  • 3 cups yellow sharp cheddar cheese grated
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Method
 

  1. Cook the chicken: Rinse and pat the chicken breasts dry. Season with salt and pepper. Cook in a skillet with olive oil over medium-high heat for 5-7 minutes per side until internal temperature reaches 165-170°F.

  2. Prepare the fillings: While chicken rests, chop lettuce, dice tomatoes and avocado, and grate the cheese. Slice the cooked chicken into bite-sized strips.
