  • 1 cup powdered sugar

  • 0.5 cup maraschino cherries finely chopped
  • 2 tablespoons bourbon or substitute with cherry juice for non-alcoholic version
  • 2 tablespoons corn syrup
  • 0.25 cup unsalted butter softened
For Coating

Method
 

  1. Combine the vanilla wafer crumbs, powdered sugar, and chopped nuts (if using) in a large bowl.
  2. In a separate bowl, mix the chopped cherries, bourbon, corn syrup, and softened butter until well combined.
  3. Pour the wet ingredients into the dry ingredients and mix until a dough forms.
  4. Cover the bowl and refrigerate for at least 30 minutes to allow the mixture to firm up.
  5. Roll the mixture into small balls, about 1 inch in diameter.
  6. Roll each ball in powdered sugar or cocoa powder until completely coated.
  7. Place the Cherry Bourbon Balls on a baking sheet lined with parchment paper and refrigerate for another 30 minutes to allow them to set completely.
  8. Serve and enjoy.

Ensure butter is properly softened for easier mixing. Don't over-mix ingredients as it can lead to tough texture. If dough is too sticky, add more vanilla wafer crumbs.
