Potatoes
  • 2 lbs Yukon Gold potatoes cubed
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
Sausage
  • 1 lb smoked sausage sliced
Ranch Dressing
  • 1 cup buttermilk ranch dressing
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped fresh chives
  • Red pepper flakes Optional

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. Prepare the potatoes: In a large bowl, toss the cubed potatoes with olive oil, garlic powder, salt, and pepper. Make sure all potatoes are coated well.
  3. Arrange the potatoes: Spread the seasoned potatoes in a single layer on a baking sheet.
  4. Roast the potatoes: Bake for 20 minutes.
  5. Add the sausage: Remove the baking sheet from the oven and add the sliced smoked sausage on top of the potatoes.
  6. Continue baking: Return to the oven and bake for another 15 minutes, or until the potatoes are tender and the sausage is browned.
  7. Dress and cheese: Remove from the oven and drizzle the buttermilk ranch dressing evenly over the potatoes and sausage. Sprinkle with shredded cheddar cheese and chopped chives.
  8. Melt the cheese: Return to the oven for 5 minutes, or until the cheese is melted and bubbly.
  9. Serve: Let cool slightly before serving. Sprinkle with red pepper flakes if desires.
