Ingredients
  

For the Rice
  • 1 cup long-grain white rice uncooked
  • 2 cups water
  • 1/2 tsp salt
For the Beans & Cheese
  • 2 cans black beans 15 oz each, drained and rinsed
  • 1 jalapeño minced (optional, for heat)
  • 1/2 cup chicken or vegetable broth
  • 1 tsp cumin ground
  • 1/2 tsp chili powder
  • 2 cups shredded cheddar cheese
  • 1/4 cup fresh cilantro chopped, for garnish

Method
 

  1. Cook the Rice: In a saucepan, combine the uncooked rice, 2 cups of water, and 1/2 tsp salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15-18 minutes, or until water is absorbed and rice is tender. Fluff with a fork.

  2. Prepare the Beans: While the rice is cooking, heat a large skillet over medium heat. Add the drained and rinsed black beans, minced jalapeño (if using), broth, cumin, and chili powder. Stir to combine.

  3. Bring the bean mixture to a simmer and cook for 5-7 minutes, stirring occasionally, until the liquid has slightly reduced and the flavors have melded.
  4. Combine and Serve: Stir the cooked rice into the skillet with the beans. Mix well. Remove from heat.
  5. Sprinkle the shredded cheddar cheese evenly over the rice and beans. Cover the skillet for a few minutes to allow the cheese to melt.

  6. Garnish with fresh cilantro before serving. Enjoy your cheesy black beans and rice!

Notes

For an extra kick, add a pinch of cayenne pepper with the other spices. Serve with a dollop of sour cream or a squeeze of lime for added flavor.
