- Cook the Rice: In a saucepan, combine the uncooked rice, 2 cups of water, and 1/2 tsp salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15-18 minutes, or until water is absorbed and rice is tender. Fluff with a fork.1 cup long-grain white rice, 2 cups water, 1/2 tsp salt
- Prepare the Beans: While the rice is cooking, heat a large skillet over medium heat. Add the drained and rinsed black beans, minced jalapeño (if using), broth, cumin, and chili powder. - Bring the bean mixture to a simmer and cook for 5-7 minutes, stirring occasionally, until the liquid has slightly reduced and the flavors have melded.
- Combine and Serve: Stir the cooked rice into the skillet with the beans. Mix well. Remove from heat.
- Sprinkle the shredded cheddar cheese evenly over the rice and beans. Cover the skillet for a few minutes to allow the cheese to melt.2 cups shredded cheddar cheese

Notes
For an extra kick, add a pinch of cayenne pepper with the other spices. Serve with a dollop of sour cream or a squeeze of lime for added flavor.
