  • 4 tbsp cream cheese dairy or plant-based almond milk cream cheese
  • 1/4 cup blueberry puree fresh blueberries mashed with a fork or blended
  • 1 splash lemon juice optional, to brighten the blueberry color

Method
 

  1. Start by preparing your blueberry puree. You can use a small blender to get a smooth consistency or finely mash fresh blueberries with a fork. If you want a more vibrant purple hue, add a small splash of lemon juice to the berries during this step.

  2. In a medium mixing bowl, combine the protein powder, coconut flour, granulated sweetener, and cream cheese.

  3. Add the prepared blueberry puree to the dry ingredients.

  4. Use your hands to knead and press the dough together. This is the most effective method to ensure the coconut flour fully absorbs the moisture and the dough becomes consistent.
  5. Check the texture of your dough. If it feels too soft or sticky, add an extra teaspoon of coconut flour. If it is too thick or crumbly, add a teaspoon of water or almond milk until it reaches a rollable consistency.
  6. Roll the dough into tablespoon-sized balls.
  7. Place the bites on a plate or in a container and refrigerate for at least 15 minutes to allow them to set.

Notes

Use room-temperature cream cheese for smoother blending and adjust the dough with extra liquid or flour if needed due to the absorbency of coconut flour. You can substitute blueberries with other berry purees or add chocolate chips for extra indulgence.
