  • 1 package Hawaiian sweet dinner rolls 12-count
  • 1 pound lean ground beef
  • 1 small yellow onion finely chopped
  • 2 tablespoons neutral oil divided
  • 1 tablespoon yellow mustard
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon garlic powder
  • Kosher salt and freshly ground black pepper to taste
  • 6 slices American cheese 6 to 8 slices
  • 1 cup cheddar cheese shredded
  • 1/2 cup dill pickles sliced
  • 2 tablespoons melted butter or olive oil
  • 1 tablespoon white sesame seeds
Burger Dipping Sauce
  • 1/2 cup mayonnaise
  • 2 tablespoons ketchup
  • 1 tablespoon sweet pickle relish
  • 1 teaspoon yellow mustard

Method
 

  1. Arrange a rack in the middle of the oven and preheat to 350°F.
  2. Heat one tablespoon of oil in a large skillet over high heat. Add the chopped onions and cook until they are charred in spots. Transfer the onions to a plate and set aside.

  3. In the same skillet, add the remaining oil and the ground beef. Cook over medium-high heat, breaking the meat into small crumbles with a wooden spoon. Once cooked through, stir in the yellow mustard, Worcestershire sauce, garlic powder, salt, and pepper. Continue cooking until the beef is deeply browned in spots, then remove from heat.

  4. Without separating the individual rolls, use a serrated knife to cut the entire block of Hawaiian rolls in half horizontally. Place the bottom half cut-side up in a 9x13-inch baking dish or a small rimmed baking sheet.

  5. Layer the American cheese slices evenly across the bottom rolls. Top with the sautéed onions, followed by the beef mixture (use a slotted spoon to avoid excess grease). Sprinkle the shredded cheddar cheese and the dill pickles over the beef. Place the top half of the rolls over the pickles.

  6. Brush the tops of the rolls with melted butter or olive oil and sprinkle with sesame seeds. Cover the dish tightly with aluminum foil. Bake for 10 minutes, then remove the foil and bake for another 12 to 15 minutes until the cheese is melted and the tops are golden brown.

  7. While the sliders bake, whisk together the mayonnaise, ketchup, relish, and mustard in a small bowl. Adjust seasoning with salt and pepper as desired.

  8. Cut the sliders into individual pieces and serve warm with the burger sauce for dipping.

Notes

Use a slotted spoon when transferring the beef to the rolls to prevent excess fat from soaking into the bottom bun. Store any leftover sliders in an airtight container in the refrigerator for up to 3 days.
