For the Dough
  • 1 loaf Italian bread 1 pound, preferably day-old
  • 0.5 cup unsalted butter 1 stick, melted
  • 4 cloves garlic minced
  • 0.25 cup chopped fresh parsley
  • 0.5 teaspoon garlic powder
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper
For the Cheese
  • 1.5 cups shredded mozzarella cheese
  • 0.5 cup grated Parmesan cheese

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Cut the bread diagonally, creating a crosshatch pattern, being careful not to cut all the way through to the bottom crust and spacing about 1 inch apart.
  3. In a small bowl, mix melted butter, minced garlic, parsley, garlic powder, salt, and pepper.
  4. Brush the garlic butter mixture into the cuts of the bread.
  5. Stuff mozzarella and Parmesan cheese into the slices, ensuring each crevice is filled.
  6. Wrap the bread in aluminum foil.
  7. Bake for 15 minutes.
  8. Unwrap the bread and bake for an additional 5-10 minutes, or until the cheese is melted and bubbly.
  9. Serve immediately and enjoy.

Notes

Use day-old Italian bread for better structure and to prevent sogginess. Create deep cuts but don't slice all the way through. Generously brush garlic butter into every crevice. Use good quality mozzarella that melts well. Wrapping in foil initially helps cheese melt evenly without burning crust. Remove foil for final minutes to create golden-brown, bubbly top. Can experiment with different cheeses or herbs. Serve with marinara, pesto, or garlic aioli for dipping.
