Method
 

  1. Activate the Yeast: In a large bowl, combine warm water, sugar, and yeast. Let sit for 5-10 minutes until foamy.
  2. Make the Dough: Add melted butter, salt, and flour to the yeast mixture. Mix until a shaggy dough forms.
  3. Knead the Dough: Turn the dough out onto a lightly floured surface and knead for 5-7 minutes, until smooth and elastic.
  4. Let it Rise: Place the dough in a lightly oiled bowl, turning to coat. Cover and let rise in a warm place for 1 hour, or until doubled in size.
  5. Prepare Baking Soda Bath: Preheat oven to 450°F (232°C). In a large pot, bring 10 cups of water and baking soda to a boil.
  6. Shape the Bites: Punch down the dough and divide it into equal pieces. Roll each piece into a rope. Cut the ropes into bite-sized pieces.
  7. Boil the Bites: Carefully drop the Buttery Soft Pretzel Bites into the boiling baking soda bath, about 10-12 at a time. Boil for 30 seconds, remove with a slotted spoon, and place on a parchment-lined baking sheet.
  8. Bake: Bake for 12-15 minutes, or until golden brown.
  9. Butter and Salt: Brush the pretzel bites with melted butter and sprinkle with coarse sea salt immediately after removing from the oven.
