  • 1/2 cup grated Parmesan cheese

  1. In a medium bowl, combine the diced tomatoes, chopped basil, minced garlic, olive oil, balsamic vinegar, salt, and pepper.
  2. Mix gently to ensure all ingredients are well combined.
  3. Stir in the grated Parmesan cheese.
  4. Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld.
  5. Serve chilled with toasted baguette slices or your favorite crackers.

Notes

For the best flavor, use vine-ripened Roma tomatoes that are firm and fragrant. Don't skimp on the fresh basil. Mincing the garlic finely ensures it blends seamlessly into the dip. If you’re short on time, pre-chopped tomatoes in a pinch work, but fresh is always best! Allow the dip to sit in the refrigerator for at least 30 minutes, or even better, an hour or two, to allow the flavors to fully develop. Before serving, give the dip a good stir to redistribute the Parmesan cheese and ensure everything is evenly mixed. Taste and adjust the seasoning if needed, adding a pinch more salt or pepper to suit your preference.
