- In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes.2 tablespoons olive oil, 1 onion

Notes
Soaking the peas overnight is recommended to reduce cooking time and improve digestibility. Use high-quality spices and low-sodium diced tomatoes to control the salt content. Feel free to add a ham hock or diced bacon for a smoky flavor.
