  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 red bell pepper diced
  • 1 can diced tomatoes
  • 2 cups vegetable broth
  • 2 tablespoons olive oil

  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh parsley chopped (optional, for garnish)

Method
 

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes.

  5. Bring the mixture to a boil, then reduce the heat to low and simmer, covered, for 30-40 minutes, or until the peas are tender.

Notes

Soaking the peas overnight is recommended to reduce cooking time and improve digestibility. Use high-quality spices and low-sodium diced tomatoes to control the salt content. Feel free to add a ham hock or diced bacon for a smoky flavor.
