  • 4 extra large chicken tenders or enough to fill the buns
  • 4 brioche hot dog buns top-split preferred
  • Shredded romaine lettuce
  • Thinly sliced Roma tomatoes
  • Thinly sliced red onion
  • 3/4 cup mayonnaise
  • 1/2 tablespoon tomato powder or 1 tablespoon ketchup
  • 1 tablespoon rice wine vinegar or white wine vinegar
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon cracked black pepper
  • 1 tablespoon finely sliced fresh chives
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon celery salt
  • 1/2 teaspoon onion powder
  • 1 tiny splash Worcestershire sauce
  • 1 splash pepperoncini juice Optional, for extra tang

Method
 

  1. Prepare the chicken tenders according to the package directions. For the best results, use an air fryer to ensure the breading becomes exceptionally crispy and golden brown.

  2. While the chicken is cooking, prepare the signature sauce. In a medium bowl, whisk together the mayonnaise, tomato powder (or ketchup), vinegar, cayenne, black pepper, chives, garlic powder, celery salt, onion powder, and Worcestershire sauce. If you have time, let this sauce sit in the refrigerator for a few hours to allow the flavors to meld.

  3. During the final minute of the chicken's cooking time, lightly brush the insides of the hot dog buns with butter. Place them in the air fryer or under a broiler for 30 to 60 seconds until they are lightly toasted.

  4. To assemble the Bird Dog Sandwiches, spread a generous amount of the prepared sauce on both interior sides of the toasted buns.
  5. Place one large chicken tender (or two smaller ones) into each bun.
  6. Top the chicken with a layer of shredded romaine lettuce, followed by the thinly sliced red onions and Roma tomatoes.

  7. Finish with a light sprinkle of fresh ground black pepper over the vegetables and serve immediately.

Notes

To achieve the most authentic flavor, try to source tomato powder for a concentrated, savory essence. Use top-split brioche buns to hold the toppings better and add a splash of pepperoncini juice if the sauce needs thinning.
