Ingredients
  

Meat Filling
  • 1 tablespoon olive oil
  • 1 pound ground beef or lamb
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 1 14.5 ounce can diced tomatoes undrained
  • 1 cup beef broth
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
Mashed Potato Topping
  • 2 pounds russet potatoes peeled and quartered
  • 1/2 cup milk
  • 4 tablespoons butter
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Method
 

  1. Prepare the Potatoes: Place potatoes in a large pot, cover with water, and bring to a boil. Cook until tender, about 15-20 minutes.

  2. Cook the Meat: While potatoes cook, heat olive oil in a large skillet over medium heat. Add ground beef or lamb and cook, breaking it up with a spoon, until browned. Drain off any excess grease.

  3. Add Vegetables & Aromatics: Add chopped onion and minced garlic to the skillet and cook until softened, about 5 minutes. Stir in frozen mixed vegetables, diced tomatoes, beef broth, Worcestershire sauce, thyme, salt, and pepper.

  4. Simmer the Filling: Bring the mixture to a simmer and cook for 10-15 minutes, or until the sauce has thickened slightly.
  5. Mash the Potatoes: Drain the cooked potatoes and return them to the pot. Add milk, butter, salt, and pepper. Mash until smooth and creamy.

  6. Assemble the Pie: Pour the meat filling into a 9x13 inch baking dish. Spread the mashed potatoes evenly over the top of the meat filling.
  7. Bake: Bake in a preheated oven at 375°F (190°C) for 20-25 minutes, or until the potatoes are lightly golden brown.
