Method
 

  1. Preheat your oven to 350°F. Prepare an 8x8-inch baking pan by spraying it with non-stick cooking spray or lining it with parchment paper for easy removal.
  2. In a large mixing bowl or the bowl of a stand mixer, beat together the softened salted butter, granulated sugar, and the zest of one lemon. Continue mixing until the mixture is light and fluffy.
  3. Add the eggs one at a time, beating well after each addition to ensure the batter is smooth. Stir in 1 tablespoon of fresh lemon juice.
  4. Gently mix in the all-purpose flour and baking powder. Stir until just combined, being careful not to overmix the batter.
