Ingredients
  

Chicken
  • 1.5 lbs boneless, skinless chicken breasts
Vegetables
  • 2 carrots peeled and chopped
  • 2 celery stalks chopped
  • 1 yellow onion chopped
  • 2 cloves garlic minced
Broth
  • 8 cups chicken broth low sodium preferred
  • 4 cups water
Seasoning
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon salt adjust to taste
  • 1/4 teaspoon black pepper
  • 1 bay leaf
Optional
  • 1 cup egg noodles cooked

  • Large Pot or Dutch Oven

Method
 

  1. Cut chicken into bite-sized pieces.
    1.5 lbs boneless, skinless chicken breasts
  2. Sauté vegetables until softened, then add garlic.
    2 carrots, 2 celery stalks, 1 yellow onion, 2 cloves garlic
  3. Add chicken and broth.
    1.5 lbs boneless, skinless chicken breasts, 8 cups chicken broth, 4 cups water
  4. Season and simmer for at least 30 minutes.
    1 teaspoon dried thyme, 1 teaspoon dried rosemary, 1/2 teaspoon salt, 1/4 teaspoon black pepper, 1 bay leaf
  5. Add noodles (optional) last 5 minutes.
    1 cup egg noodles
