  • 1 tablespoon olive oil
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 green bell pepper chopped
  • 1 pinch cayenne pepper
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 cups cooked shredded chicken breast about 1.5 pounds
  • 4 cups chicken broth
  • 1 15-ounce can great northern beans rinsed and drained
  • 1 4-ounce can diced green chilies undrained
  • 8 ounces cream cheese softened

Method
 

  1. Heat olive oil in a large pot over medium heat. Add onion, garlic, and bell pepper. Cook until softened, about 5 minutes.

  2. Stir in the cumin, chili powder, oregano, salt and pepper. Cook for 1 minute, until fragrant.

  3. Add the shredded chicken, chicken broth, great northern beans, and green chilies to the pot. Bring to a simmer.

  4. Reduce heat and simmer for 15 minutes, stirring occasionally, to allow the flavors to meld.
  5. Stir in the softened cream cheese until melted and creamy.
