- Wash and dry the strawberries.1 pound fresh, ripe strawberries
- Cut a small portion off the top of each strawberry (stem end only).1 pound fresh, ripe strawberries
- Using small spoon or melon baller, carefully scoop out a small well in each strawberry.1 pound fresh, ripe strawberries
- In a medium bowl, mix the softened cream cheese, honey, lemon juice, vanilla extract, and salt until smooth and creamy.4 ounces cream cheese, 2 tablespoons honey (or maple syrup), 1 tablespoon lemon juice, 1/4 teaspoon vanilla extract, Pinch sea salt
- Fill each strawberry cavity with the cream cheese mixture.1 pound fresh, ripe strawberries, 4 ounces cream cheese

- Serve immediately, or chill for later enjoyment.
Notes
Growing up, my grandmother always had a little "something special" tucked away for dessert – usually something that was secretly healthy disguised by a touch of indulgence. These strawberries remind me of those moments. She'd always use the ripest berries from her garden and somehow elevate them.
