Lightly grease the inside of your crockpot with cooking spray.
Place the chicken breasts evenly in the bottom of the prepared crockpot.
2 lbs boneless, skinless chicken breasts
In a bowl, whisk together the cream of chicken soup, onion soup mix, and chicken broth. Make sure there are no lumps

Add the garlic powder, salt, pepper, and thyme (if using) to the gravy mixture. Pour evenly over the chicken.

Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours, or until the chicken is cooked through and easily shreds with a fork.
Remove the chicken from the crockpot and shred it with two forks.

In a small bowl, whisk together the flour and milk (or cream if using) until smooth. Pour this slurry slowly into the crockpot, stirring constantly.
1/4 cup all-purpose flour, 1/4 cup milk or cream
Cover and cook on high for another 15-20 minutes, or until the gravy has thickened to your desired consistency. Return the shredded chicken to the crockpot and stir to combine. Serve Best Crockpot Chicken and Gravy hot over mashed potatoes, rice, or noodles.
