Ingredients

  • 4 ounces cream cheese softened
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1/4 teaspoon black pepper
For the Cranberry Topping:
  • 1 cup fresh or frozen cranberries
  • 1/4 cup granulated sugar
  • 1/4 cup orange juice
  • 1 tablespoon orange zest
  • 1/4 cup chopped walnuts or pecans optional

Method
 

  1. Whip the Feta: In a food processor, combine the crumbled feta, softened cream cheese, olive oil, lemon juice, and black pepper. Process until smooth and creamy, scraping down the sides as needed.
  2. Make the Cranberry Sauce: In a medium saucepan, combine the cranberries, sugar, orange juice, and orange zest.
  3. Simmer: Bring the mixture to a boil over medium heat, then reduce heat and simmer for about 10-12 minutes, or until the cranberries have burst and the sauce has thickened. Stir occasionally to prevent sticking.
  4. Cool Slightly: Remove the cranberry sauce from the heat and let it cool slightly.
  5. Assemble the Dip: Spread the whipped feta onto a serving platter or bowl.
  6. Top it Off: Spoon the cranberry sauce over the whipped feta.
  7. Garnish (Optional): Sprinkle with chopped walnuts or pecans, if desired.
  8. Serve: Best served immediately or chilled for later.

For the creamiest whipped feta, make sure your cream cheese is fully softened before blending. Using high-quality feta cheese will make a difference in the overall flavor of the dip. If you don't have a food processor, you can use a hand mixer, but it might take longer to achieve the desired consistency.
